Taco 'Meat' Ingredients
- 3c dry soy curls
- 8-10 cremini mushrooms, chopped
- 3 stalks celery, sliced thin
- 2 tsp Taco Seasoning (see below)
- 1 T cooking oil
Instructions
Rehydrate the soy curls and chop into bite sized pieces
Slice the celery in thin (1/8-¼ in) and chop up the mushrooms (½-¾ in pieces).
If using an air fryer:
Preheat the air fryer
In a bowl, mix the soy curls, mushroom, and celery in a bowl.
Add the cooking oil and stir until mix is well coated, add the taco seasoning, and stir until evenly distributed.
Put the mix in the air fryer basket and cook at 350F for 16-20 minutes. Pause the cooking halfway to stir the mix to help it cook evenly.
If using a frying pan:
Heat the cooking oil in a pan.
Add the celery and mushrooms and cook for 1-3 minutes
Add the soy curls and taco season and stir until well combined.
Cook on medium heat until the soy curls start to brown and crisp up.
Taco Seasoning Ingredients
- 1 1/2 tsp cumin, ground
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp smoked paprika
- 1/2 tsp cardamom, ground
- 1/4 tsp asofoetida
Instructions
Mix the spices together and store in a sealed container.
Use 2-3 tsp during food prep to add flavor.
